On the Bone is a ‘chop house’ which is being brought to Yalm by Derek Hardy who will also have Flying Saucers in the ground floor café bar and also owns Basque restaurant Don Txoko and Japanese grill Fire Izakaya. It will specialise in serving charcoal-grilled chops and steaks with modern, gutsy flavours. There’ll also be fresh ground burgers and slow cooked ribs accompanied by its house made sauces.
Derek has established a reputation for knowing how to source and enhance the flavour of steaks from his time running Don Txoko where customers can choose their sharing steak from the dry-ageing fridges on display in the restaurant.
He said, “The success we have had with Don Txoko has convinced me that the diners of Norwich love good quality meat and appreciate those that can present it to them in an authentic way. Having On the Bone as one of the kitchens in Yalm is going to be amazing for us as it will enable those with a preference for big tasting meats to enjoy them in a vibrant atmosphere. I am passionate about sourcing the best joints of meat from Norfolk and beyond to give customers fantastic tastes accompanied by great provenance.”
